I love to cook, yet, not surprisingly, have little time to do so these days. I thought I'd start sharing a few quick, easy, healthy recipes that work well for this new mom. My sister made this for me last time I visited, and I loved it. I keep eating it as a quick, high-protein snack when I don't have time to eat a full meal. (It's great cold.) I added slivered almonds and carrots and cut back a touch on the cilantro.

Oh--and I definitely used canned chickpeas! I'm sure it's better with fresh beans, but that is definitely out of my realm of possibility right now!
